What is the maximum quality that the iOS devices can output? aka; Can we actually expect 96/24 when playing 96/24?

First, let's put aside external DACs and digital out, as we should expect that the device will output full quality digitally.

When listening with the headphone jack, what are we limited to? And is that different for any devices that apple currently sells?
As a way to reach the truth, does anyone have any hard data gathered by analyzing the output or seeing limitations in the system calls?

Josh, thats not an easy question.
Apple refuses to publish internal sound card specifications, so this became a matter of debate and arguments.
